I do not take myself too seriously, but somehow I manage to take creating in the kitchen very seriously. There are many things I cannot fix, but I can feed people. Food may not make a bad time better, but it can give someone a soft place to land for a little while. In good times, it gives memories a flavor and a smell. That feels like a huge—though perhaps self-appointed—responsibility, and it tints everything I create in the kitchen.

Not everything I make is amazing, but everything I have made has helped create an amazing backstory. The journey toward a perfectly balanced and textured bite is often colored by moments of defeat, bewilderment, and victory. I make adjustments, try again, and pay attention until the thing in front of me becomes the thing I had in mind.

Made by Chance is a small-batch home bakery in Biloxi, Mississippi. The menu grows slowly because I am not interested in selling something simply because it worked once. A lucky result is lovely; a result I can repeat is what earns a place on the menu.
